Our website will be open from Wednesday, April 16th through midday Friday, May 2nd. Pickups will take place on Saturday, May 3rd.
- To reserve, add halibut to your cart, selecting your desired cut and packaging specifications for each fish. We'll cut your halibut into either fillets, steaks, half fillets/half steaks, or leave it whole, then wrap it according to your selection.
- Once your items are added to cart, proceed to check out.
- On your day of pickup, we'll have your halibut reserved for you at the Seafood Counter. Simply pick up your order and pay for it at the register, like usual.
Our fishmongers are happy to assist you as you place reservation or can place the order on your behalf.
A limited number of halibut will be reserved for walk-ups, but availability is not guaranteed. Placing a reservation is highly recommended.
Let our fishmongers know your specifications at pickup and they will be happy to assist.
If the pickup dates don't work for you (or you simply don't need a whole halibut's worth of fish), we'll still have plenty of halibut fillets available in-store to enjoy throughout the season.

About Our Halibut
Mild and sweet with a medium texture, this wild halibut will be sustainably harvested from the Northern Pacific Ocean only a few days prior to pickup. Once caught, it's kept fresh (not frozen) and immediately shipped to our stores, giving you the opportunity to enjoy this seasonal delicacy at its finest - while also paying less per pound than you would if buying a fillet.
Halibut is great on the grill, poached, baked, roasted, or fried for the best fish and chips ever. The bones are excellent for preparing a stock; simply simmer in water with aromatics for an hour.
Your fish will arrive you to fresh, but halibut is very freezer-friendly, so you can stock up for delicious dinners to come.
Yes. Our halibut, wild caught from a well-managed, sustainable fishery, is a New Seasons Market Sustainable Choice. Co-developed with research organization Fishwise, our Sustainable Choice attribute is acquired through a strict vetting process that assesses fishery health, fish abundance, environmental impact, catch and farming methods, carbon footprint, and social responsibility.
Make the most of your whole fish! Halibut bones can be used to make a delicious fish stock, which can be the base of various soups. Outside of the kitchen, halibut bones are incredible fertilizer in your garden bed. That said, if you're unsure how to use them, worry not; our stores routinely compost any discarded bones.
